This is ridiculously easy, and I have to thank Logan for the creation of it (and Alex and Cam for the naming of it!)
Logan wanted some paleo cereal for breakfast, but was bemoaning the scant amount of chocolate chips in the bowl.
Seriously, the kid is always bemoaning something.
The boy had plenty, and I knew he was just going to end up picking the chips out and ignoring the rest.
(Stupidly simple) lightbulb moment: if I heated the paleo cereal in the microwave a bit, the chocolate would soften enough that I could stir the whole thing up and coat everything with chocolate, encouraging him to eat it all.
It worked like a charm.
Cameron and Alex immediately wanted some too, so I made a large batch and stashed the rest in the pantry for tomorrow. The chocolate hardened everything up so that it created clusters of crunchy goodness which Alex ate with almond milk like cereal and Cam and Logan enjoyed dry.
Now if only I can keep my hands from dipping into the container so often for a nibble…
Chocolate Caveman Crunch
2 cups nuts, roughly chopped (I used hazelnuts, almonds, pecans, walnuts, and almonds)
1/2 cup shredded coconut
2 tablespoons flaxseed (or other seed), if desired
2 teaspoons honey
1/2 teaspoon cinnamon
1/4 teaspoon salt
3 tablespoons dark chocolate chips
Combine all the ingredients in a microwave-safe bowl.
Microwave on high for 30 seconds. Stir.
Microwave in 15 seconds intervals until the chips have softened, but not completely melted. Stir well to coat,and turn onto waxed paper to cool.
