I do believe that I'm on a quest for assembling the greatest paleo/primal muffin recipes. I didn't intend to end up making muffins 3 and 4 times a week, but it's just sort of happened. Not surprising, really, since my cavemen have gotten tired of omelets and paleo cereal for breakfast. Add to it that muffins are generally pretty quick to whip together, versatile, easy to transport and satisfy the cavekid cravings for things that are delicious and homey and have a non-paleo feel to them.
Enter the Chocolate Chocolate-Chip Muffin. It meets all the criteria for making it a cavekid favorite, plus, well, it's chocolate.
This recipe is just a spin off the Cinnamon Muffins I posted last month. The cinnamon is replaced with cocoa powder, and some dark chcolate chips are stirred in.
Breakfast (or dessert, or snack) is served!
