I'm always looking for a good breakfast recipe that's quick and easy and will keep my boys happy. After all, omelets will only take them so far before they get bored and want something different.
I stumbled across this recipe months ago on Pinterest, and it's become a staple around here. It meets all the requirements for fast and easy and kid-friendly and delicious!
Almond butter, eggs, honey, vanilla, cinnamon, baking soda and salt are whisked up.
The mix is divided among muffin cups…. if you DON'T use silicone muffin cups (and you seriously, seriously should, since they are awesome!!), be sure to spray the muffin tin and/or paper liner with non-stick spray.
It's now evident, looking at my pics, that I need some new muffin tins…these poor things look awful.
When you're done bemoaning the condition of your pans- or if you skip that part entirely- pop the pan in the oven, and in about 17 minutes….tada!
That's it. I was really surprised by the ingredients… no almond flour or anything! And since I always have homemade almond butter on hand, this works perfectly.
A tasty little breakfast or snack, and great for grabbing as you run out the door.
