There's no recipe my boys request more than this one…to the point of exasperation on my behalf every time they bring it up. They seem to have this fixation on tis recipe, and really, with chicken legs in general, lately…I think they just love the fact that they get to eat with their hands when we have them.
I have to confess, I kinda like that part too.
Nearly everything about preparing and cooking this dish is done by my boys, from start to finish, with the notable exception of firing up the grill- but even Alex helps me with that under close supervision. I swear, I think my boys know the recipe better than I do at this point, even down to knowing when the chicken is done cooking, just by sight!
Each of the cavemen has their tasks when we make these (though lately they squabble so much over who gets to do what that we've let them help with each aspect of the preparation equally): getting out the ingredients, measuring and mixing the seasoning, dropping the chicken into the Ziploc bags, flipping them around in the bag repeatedly to coat them with the marinade.
We put the chicken in the marinade late morning or early afternoon, sometimes even a day or so ahead of time. And when I'm grilling them, the boys are constantly wanting to check their progress, even pointing out which ones need to be moved away from the flame or when they think the chicken is ready for indirect cooking.
These are pretty simple to make, we always have the ingredients on hand, and best of all, they taste good. Nothing too fancy, just good flavor.
Winner, winner, chicken dinner!
Crispy Grilled Chicken Legs
1 teaspoon palm sugar or 1 1/2 teaspoons honey
1 teaspoon seasoning salt
1 teaspoon paprika
1 teaspoon pepper
1 teaspoon garlic powder
1 tablespoon olive oil
Mix all marinade ingredients in a zip lock bag add chicken.
Chill and marinade for 4 hours.
Grill chicken on a well oiled grill until well browned on all sides, turning once, 30 to 40 minutes (meat near thigh bones should no longer be pink when tested with the tip of a knife).
If the chicken browns quickly, finish over indirect heat.
