Someone please come and take this away from me.
I find myself having a mad, passionate affair with coffee this summer. I haven't enjoyed it this much in years- not since a double round of morning sickness with Alex 9 years ago left me gagging at the taste of it (athough, oddly enough, I still loved the smell….). But suddenly, despite the wicked heat of the hottest summer on record and my previous dislike of it, I've been making a cup of coffee for myself almost daily. Of course, it's been just to dump a bunch of ice and other goodies in it….
I've been craving this. Wanting, needing this drink fairly regularly- and indulging in those wants and needs all too often. Something about it just keeps pulling me back…the rich bitterness of coffee offset with the earthy nuttiness of dark cocoa powder, the hint of sweetness from honey (and/or stevia), the smooth creaminess from almond milk and heavy cream, the heady scent and taste of almond and vanilla extract…ah, hold on, I need another drink.
I've been using those single-serve coffee-in-a-teabag things to make my coffee, since my coffemaker takes up too much space, and frankly, would only invite me to drink these all day long. If I ever drag my coffemaker out, though, you can bet I'm going to make a whole pot and then freeze the leftovers in an icecube tray for later use instead of ice cubes.
1 cup strong brewed coffee, cooled to room temperature
1/2 cup almond milk
1/4 cup heavy cream1 1/2 teaspoons cocoa powder
1 1/2 tablespoon honey, or 3/4 teaspoon stevia (or 1/2 tablespoon of honey and 1/2 tsp of stevia)
1/4 teaspoon vanilla extract
1/2 teaspoon almond extract
4-6 ice cubes or 1 cup crushed ice
In a blender, combine all ingredients except ice and blend 30 seconds.
Add ice into a glass, and pour mocha over the ice.
