Sometimes you just need something super simple, and fast, but totally delicious.
My little cavemen came home from Martial Arts starving to death, and I had a monster headache that just wouldn't quit, and Chris was on his way home and had skipped lunch. I was toying with trying a new recipe out, and just couldn't drum up the energy… and the phone rang (one of those phone calls you dread taking but know it can't be avoided). And seriously, I was running out of time and patience and energy. I had two packages of chicken thighs defrosted and waiting some sort of magical treatment to turn them into an amazing dinner….so I winged it.
It's embarassingly easy, but utterly delicious.
Ready? Don't blink, you might miss it….
Chicken thighs are sprinkled with garlic powder, Italian seasoning, and Parmesan cheese and then baked for 45 minutes at 375F.
Add a salad on the side and some broiled zucchini, and boom. Done. Delicious dinner is served.
