Don't tell me you don't like coleslaw….this isn't coleslaw. This is crunchy, spicy, tangy-sweet Mexican-y amazing-ness that goes perfectly with just about anything.
Or by itself, at any time.
Say, for instance, breakfast.
Yes, I ate it for breakfast. And you know what? I'm not ashamed.
It's also ridiculously easy to make, especially with the convenience of prepared slaw mixes.
Oh, did I mention it's really tasty?
This is so good I've made it twice now per the recipe and once following the same idea and using Asian/Thai flavors instead (cilantro, basil, ginger, fish sauce, garlic, a pinch of Chinese 5-spice, a bit of sirhacha, a drops of sesame oil and some rice wine vinegar). I shared it at a potluck meeting on Friday and then at a Father's Day get toether yeterday, it's a definite hit!
Paleo Mexican Slaw
Juice of 1 lime
4 tablespoons of white vinegar
1 clove of garlic
1 tsp. cumin
1 tsp. chili powder
1 tablespoon honey
salt & pepper
1/4 cup of good olive oil
handful of cilantro, rinsed well and minced
2 green onions, chopped
1/2 bag of pre-shredded slaw (you could, of course, grate your own cabbage)
1/2 bag broccoli slaw mix
in a good sized bowl, mix together the first 7 ingredients.
Adjust any ingredients to taste.
Slowly drizzle in the olive oil as you whisk vigorously.
Mix in cilantro and green onions.
Toss with slaw mixes, and enjoy!
