I found Juli's recipe for Simple Blueberry Muffins on her blog, and had to try them. Immediately.
Oh, and my apologies to Juli for talking about her so intimately in my posts… I guess when you stalk someone's blog and drool over their awesome pics and amazing recipes for 4 months, you kind of feel like you have a personal connection.

Back to the muffins.
The seriously awesome PaleOMG Go-Make-These-NAOW muffins.
I make my own nut butters (more recipes to come), so I figured I'd just make my own almond butter when I decided to make the muffins for breakfast.
If you don't buy pre-made almond butter or have it on hand, I would advise a little forethought and planning if you want to surprise your loved ones with these muffins one morning. The food processor rattling (LOUDLY) and whirring around for 15 minutes while it pulverizes the almonds and turns them into almond butter is not something they are likely to sleep through.
I discovered long ago that it's best to let sleeping Cavemen lie.
Everything else about making these muffins goes smoothly, though.
Just take all the ingredients and mix them up in your bowl, then fold in your blueberries, spoon the batter into muffin cups. Bake 15-20 minutes (I think mine took about 18).
Here's the tricky part…
You have to let them cool before you eat them.
It's difficult, because they look amazing. They smell redunkulously good.
Oh God, are they ever good.
Once they are cool enough to avoid searing your tongue on a hot mess of blueberry (about 15 minutes)…enjoy.

PaleOMG Blueberry Muffins
Prep time: 5 mins
Cook time: 20 mins
Total time: 25 mins
1 cup almond butter
1 cup almond meal/almond flour
3 eggs, whisked
1/2 cup Raw Honey
1/3 cup Unsweetened Shredded Coconut
1/3 cup Coconut Oil, melted
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt
pinch of cinnamon
1/2 cup fresh blueberries
Preheat your oven to 350 degrees.
Mix all ingredients except for blueberries together in a bowl (if you're good at baking, you'll know to mix the dry then the wet ingredients then mix together, but I do all the ingredients together and it works out just fine).
If you don't want purple muffins, fold the blueberries in last.
Place ingredients into 8-10 silicone muffin cups in a muffin tin, or you can use muffin tin paper liners.
Bake for 15-20 minutes. Just keep an eye on it, they will puff up and look adorable.
Eat them and be happy. And merry.
