Did you ever have one of those days?
The omg-what-did-I-do-to-deserve-this-giant-crap-sandwich type days?
I've had a few of those recently, and today was particularly bad. I'll spare you the gruesome details, and merely announce that my butt muscle hurts. And that my floor is super clean. And that a certain salesperson probably will not be calling me again. And I have feathers in my hair- unintentionally. And that the dog is currently cowering under my feet. And that my husband's shoes are on the front lawn.
And that we have no more 60% dark chocolate, and because of that, heads. Will. Roll.
I needed a pick-me-up, and after scoring some really top-quality strawberries at Walmart (seriously, Walmart. I know, right??) I knew Strawberry Shortcake was the answer.
It was SO the answer. I'd apologize for the blurry pics, but I'm too busy stuffing my face.
It doesn't undo the entire crap-sandwich, but it goes a long way to helping the day be a little bit better!
1 pint strawberries
2 teaspoons honey
Wash, hull, and slice strawberries.
Drizzle with honey and stir.
If desired, sprinkle with 1/2 teaspoon cinnamon, and stir to coat.
2/3 cup coconut flour
2/3 cup butter or coconut oil, melted
1/3 cup honey
2 tsp vanilla
1 tsp baking powder
dash of salt
Preheat oven to 350 degrees.
In a large bowl, beat together butter (or coconut oil), honey, eggs and vanilla.
Add dry ingredients and beat until well-combined and no lumps remain.
Pour into 12 silicone muffin liners.
Bake for 25-30 minutes, until golden brown and toothpick inserted comes out clean.
Let cool at least 5 minutes.
Coconut Milk Whipped Cream:
1 can full-fat, unsweetened coconut milk, refrigerated
1 tsp vanilla
1-2 tsp honey or pure maple syrup (if desired)
Take coconut milk out of fridge and skim off the solid part into a mixing bowl. Don’t use the watery part.
Beat the solid milk until peaks begin to form, then add vanilla and honey and beat for a few more minutes.
Remove shortcakes from muffin liners.
Slice each shortcake into 3 equal pieces.
Lay the bottom piece in serving dish.
Top with strawberries, then with a bit of whipped cream.
Add middle piece of shortcake, and repeat layers.
Place top piece of shortcake on top with a bit more whipped and crown with a strawberry; serve.
